I. Jelly overview:
Jelly is a kind of food processed with water, sugar and densifier through working procedures including dissolution, mixture, sterilization, filling and cooling. Eat jelly frequently, you can enhance the humidity in your intestines and improve constipation. In addition, as a kind of food with low protein content and low calorie, jelly contains little fat, so persons who want to lose weight or keep slim can eat it assuredly. Furthermore, as it is easy to digest and absorb, and favored by children, jelly becomes a kind of food suitable for both the young and the old.
II. Classification of jelly products
(1) Classification based on tissue shape
| a. Gel jelly: Jelly whose content can basically remain in original shape of gel after poured from the packing container. |

| Jelly whose content is in a shape of semi-fluid gel and can be directly sucked with a sucker or suction nozzle after poured from the packing container. |

(2) Classification based on materials

Fruit type
Jelly products whose syrup content is less than 15%. |

Syrup type
Jelly products whose syrup content is no less than 15%. |

Pulp type
Jelly products which contain 15% of fresh or processed fruit pieces/fruit grains (as indicated in Fig. 8). |
